The Many Benefits of Using Citri-Fi in Meat Applications

Fiberstar Citri-Fi® is a highly functional clean label ingredient derived from natural citrus fiber that can be used in poultry applications to stabilize marinades  through the cook cycle while improving yield and profit margins. Also, the improved shelf life produces great organoleptic properties, such as more moistness and tenderness post cook. To reduce costs, Citri-Fi’s purge reduction properties help to minimize the reliance on absorbency pads that are often used to soak up raw meat juices within packaging.

For ground meat applications, Citri-Fi improves the yield in raw and cooked meats. These improved yields minimize drip loss and purge which in return may lead to cost savings. In addition, Citri-Fi reduces ice crystallization during the freeze / thaw to improve shelf-life and enhance the eating experience by improving the meat’s overall texture, flavor retention and mouth-feel.
