We just returned from the 2015 IFT Expo in Chicago loaded with the latest information on new trends and new ingredients through the expo and poster presentations. There were many interesting products and concepts presented during this event and we would like to share some of the exciting new products and applications that were featured by our suppliers.
ADM / Matsutani Fibersol
ADM / Matsutani LLC JV featured Fibersol, their premier line of soluble dietary fiber ingredients with several prototypes to meet latest trend and flavor innovations. Whether formulators are seeking ways to reduce sugar and calories, meet clean label goals, create products that help promote digestive tract health or simply boost the fiber content of a food or beverage, Fibersol has a solution.
The prototypes featured include:

Corbion Introduces New Egg Extenders
In response to the tight egg market, Corbion Caravan has launched two new egg extender and replacement solutions. Function Plus 100 and Function Plus 200 were specifically developed to address bakery industry concerns by helping you:
- Reduce or eliminate the rising costs of eggs
- Maintain taste and quality
Both of these new solutions lower product cost by enabling you to reduce, replace or extend the use of fresh, frozen or powdered eggs; and are easy to scale and handle, and create moist, tender baked goods without impacting the flavor profile of the original product.
As Corbion’s premium product, Function plus 200 can replace up to 100 percent of the powdered egg amount required in recipes for baking everything from breads, muffins and brownies to high-ratio cake systems.

Grain Processing Corporation launches New PURE-GEL®MB91
GPC’s PURE-GEL® MB91 is a specially modified corn starch and xanthan gum blend designed to hydrate easily and provide stable viscosity in the presence of extended heat and shear conditions with the added benefit of being easy to disperse. As a food starch-modified blend, PURE-GEL® MB91 is ideal for marinades because once dispersed, it remains in suspension without settling over prolonged periods. GPC presented a prototype formula with the PURE-GEL® MB91 in formed chicken breasts highlighting improved cook yield while maintaining excellent moisture through freeze / thaw and long term refrigerated storage conditions.

Kalsec® Extends Specialty Pepper Product Line
Demand for new pepper product continues to grow with more than 80% of consumers indicating they enjoy hot and spicy foods, and are looking for more complexity and specific sources of pungency in their food and beverages. To meet this need for more specialized “heat,” Kalsec® has extended its specialty pepper product line with the addition of new chili pepper varieties including cayenne, pasilla and the ghost pepper extract. These new varieties join the current lineup of Kalsec® specialty peppers including ancho, chipotle, guajillo, habanero, jalapeno, and Szechuan.
These new specialty peppers are carefully extracted in the U.S. using proprietary expeller-press technology that is consumer label-friendly; and the peppers can be used in many applications such as seasonings, prepared meals, sauces, soups, dressings, marinades, and meat and poultry products.
Kalsec® also shared their latest Clean Label Market Research Report highlighting consumers’ current clean label preferences which are no longer a passing trend as they’ve become part of the recipe in food and beverage development and messaging.

Morton Salt Expands Specialty Salt Portfolio and Production Capabilities
With the growing demand for more food grade salts, Morton Salt has expanded its specialty salt portfolio and food grade salt production capabilities by adding 45,000 sq. ft. of food grade salt manufacturing at its facility in Port Canaveral, FL. This new state-of-the-art production line will come online during the first quarter of 2016 with the increased capacity directed to manufacturers who continue to incorporate more sea salt into their products and require a more reliable, high quality supply.
In addition, Morton has expanded its specialty salt portfolio by introducing Morton PureSun Culinary Crystals, a new food grade solar salt naturally harvested from the waters of the Great Salt Lake and produced at their facility in Grantsville, UT. This new product meets FCC purity requirements and can be used in a variety of food processing applications including soups, sauces and snacks.
