Citri-Fi® citrus fiber needs to be hydrated properly to activate the full functionality including high water holding and emulsification.  There are several hydration methods to make this happen.

This citrus fiber contains high surface area which needs to be fully hydrated in order to provide the high water holding and natural emulsification properties. This is important since Citri-Fi is used at low usage levels – 0.2% to 1.0% – which less is more when formulating food products.

Equally important is the mixing time. The citrus fiber needs time to swell to its fullest capacity so that it can create high quality food products.

There are FOUR recommended methods to hydrate Citri-Fi citrus fiber.

  1. Mix Citri-Fi with other dry ingredients before adding water.
  2. Mix Citri-Fi and water using a blender.
  3. Mix Citri-Fi and water using a mixer.
  4. Mix Citri-Fi in oil before adding water to create an emulsion.
