We can also expect new menu items in the form of scraps from other items as a form of upcycling and reducing waste”
Additionally, the 2022 report indicates an expectation that we will become more “sophisticated and specific,” with our Asian cuisine, seeking popular regional foods including Thai, and more exotic flavors are expected to flourish, including: Filipino, Malaysian, and Indonesian. Kalsec credits the availability of “on-demand,” interaction opportunities with professional chefs around the world with the increased popularity. Consumers use YouTube and social media to become familiar with new foods, and techniques from chefs around the world, then apply what’s learned at home.
